Sassy Sloppy Joes
2 T Olive oil
1 C chopped yellow onion
1C chopped bell pepper
2 minced garlic cloves
1 lb ground chuck
1 tsp salt
½ ground black pepper
½ tsp chili powder
2 T tomato paste
1T yellow mustard
¼ soy sauce
Topping:
2 T butter
½ T minced garlic
½ tsp dried parsley
Assembly:
1 package rolls (Dave’s Killer Rock’N’Rolls)
3 T Sassy Mustard (any flavor)
8 slices provolone cheese
1/3 C sliced dill pickles
Directions: *Preheat oven to 350 degrees. Grease a baking dish large enough to hold all the rolls. Cook onion, bell pepper, and garlic in olive oil in a large skillet until so. Increase heat and add the ground beef. Cook until done and drain fat. Reduce heat to low and add salt, pepper, chili powder, tomato paste. Stir to combine, remove from heat and set aside. *Heat buer and garlic in saucepan until buer is melted. Stir in parsley. *Cut rolls in half longways. Put boom half of rolls in pan and brush with Sassy Mustard. Place half of cheese on rolls, top with meat mixture, the rest of the cheese and finish with sliced pickles. Brush with garlic buer mixture. *Cover tightly with foil and bake for 12 minutes. Uncover and bake for 5 more minutes. Separate rolls to serve.
